Curry Powders
Curry powders come in MANY different varieties, each tasting quite different from one another. The type of curry powder used makes a HUGE difference in the outcome of this recipe.
I use Penzey's Maharajah Curry Powder. EVERYONE who has tried this particular version loves it .. no doubt the saffron adds a lot to this overall appeal (and the price!). If you have a curry powder that you particularly love the taste of, use that. But if you are going to have to get some for this recipe, I'd definitely recommend starting with this variety.
