Holiday Meals

New vegetarians or omnivores who will be serving vegetarians at their holiday table often panic at the thought of planning a holiday meal without animal based foods.
As these photos show, a holiday meal can be just as special and filling and delicious and satisfying as any animal-food based meal.

Meal ideas include seitan roasts, stuffed winter squash based meals (see here and here), or tofu based entrees. Most of the side dishes of traditional holiday meals are vegetarian at their core, and can easily be made vegan without any taste change. Earth Balance can be used in lieu of butter, plain (full fat) soy milk can be used in cooking without anyone being the wiser (such as for adding to mashed potatoes, etc).

"Roasted garlic and parsley mashed potatoes topped with a ridiculously delicious oyster mushroom gravy, a slice of tri-colored potato torte with cashew cheese and rosemary spinach pesto (from the Artful Vegan), sauteed spinach with garlic and dried cranberries, miso and garlic chive sweet potatoes and finally, a slice of homemade apple sage seitan with chestnut sage oyster mushroom stuffing."
