What to do
with
leftover Okara

Okara is the remains one has leftover after making soymilk.  It is what is leftover in the stainless filter cup (if using one of the older style soymilk makers) and/or what you filter out through a filter or cheesecloth during the process of making soymilk.

So far I've got 4 recipes that I use regularly to use up the okara:

Chickpea Spread w/ herbs
Curried Chickpea Spread
Parmesan Cheese
Brownies

Another okara-using recipe that I have not yet tried but definitely will soon is
Crispy Okara Waffles by Bryanna Clark Grogan.
